Japan-based sake brewery Suzuki Shuzoten has used AI to create sake tailored to the flavors of different species of fish.  Brewery's president Daisuke Suzuki wants to promote the fishermen of the Fukushima region, which, in 2011, was devastated by an earthquake and subsequent nuclear accident, reports Japan Times. Suzuki Shuzoten, one of the oldest continually operating sake houses in Japan, is making sake dedicated to each fish species leveraging AI technology.  Suzuki used a taste sensor developed by Aissy, a Tokyo-based taste consulting firm. Eight sakes tailored to the flavor of different fish will be released by the brewery, reveals Japan Times.  In 2020, the average person in Japan consumed approximately 23.4kg of fish and seafood and four liters of refined sake.  Matsuemon Suzuki founded sake maker Suzuki Shuzoten in 1689, and the Suzuki family has run it for 19 generations.  Pacific Islands Forum members have been in dialogue with the Japanese government on its proposed plans to release over 1M tons of contaminated nuclear wastewater into the Pacific Ocean, as announced in April 2021.
